Coldiretti: tests found that five mozzarella out of 18 are not made with fresh milk
[Italica] - “Almost one third of the mozzarella cheese sampled is not derived exclusively from fresh milk” - Sergio Marini, chairman of the main Italian farmers' organization Coldiretti said during the International Agri-business Show of Verona. This testing system, drawn up by the Univesity of Bari, detects whether a mozzarella cheese is produced only with fresh milk or with frozen curds. “Dairies contribute with more than 22 billion euros to the value of the Italian food processing industry and this deception puts at risk 43 thousand barns and 200 thousand jobs” - Marini added. Frozen curds used to produce mozzarella come mainly from Lithuania, Hungary, Poland and Germany.
